Turmeric Dressing

Asparagus is a great food for Spring. Enjoy steamed asparagus with this healthy flax and turmeric dressing drizzled on top brought to us by lydiabily on EHow.

Instructions

Things You’ll Need:

  • 1/4 cup flax seed oil
  • 1/8 cup apple cider vinegar
  • 1/8 cup balsamic vinegar
  • 2 TBS tamari soy sauce
  • 2 cloves garlic
  • 1/8 tsp. turmeric
  1. Step 1

Peel the garlic cloves and cut off the ends. Mince the garlic or press it through a garlic press.

  2. Step 2

In a glass bowl or container, mix the oil, vinegars and tamari soy sauce. Adjust the amounts slightly to taste, but be careful not to overdo it, especially on the tamari. If you don’t have tamari soy sauce, you can substitute miso or sea salt.

  3. Step 3

Add the garlic and turmeric to the dressing and stir vigorously or put in a bottle and shake.

  4. Step 4

Serve with salad, cooked greens, raw vegetables, bean salads or grain dishes. But use it sparingly — this is strongly flavored and a little goes a long way.

  5. Step 5

Store any extra salad dressing in the refrigerator. It keeps well. Just mix it again before serving.

Fish in a Packet

Fish can be an amazing source of protein and omega oils, supporting your skin, hair and overall beauty. This Valentine’s day, make a beauty-friendly gourmet meal that’s easy and delicious.

Fish in a Packet is featured in “Eating Right for Your Hormonal Health”. To order the book, visit http://karenspencerdees.com/about.html

4 pieces foil or baking parchment in 12-inch squares
12-16oz flounder fillets, cut in 3-4 oz portions
Fresh herbs, to taste
1 C vegetables, thinly sliced or julienne
4 Tbsp unsalted butter (olive oil or non-dairy replacement)

To prepare each packet, place fish in center of foil or parchment & sprinkle with one of the suggested combination ingredients. Fold foil over ingredients & secure all edges for a tight seal. Pace in a shallow baking pan & bake at 375 degrees F for approx 20 mins or until fish turns opaque.

Suggested combinations:
Note: butter can be replaced with olive oil or a non-dairy substitute

Fish, spinach, lemon juice, nutmeg, butter
Fish, scallions, carrots, curry powder, butter
Fish, celery, lemon juice, thyme, butter
Fish, cucumber, lemon juice, dill, parsley, butter
Fish tomato, scallions, basil, lemon juice, butter

This method of preparing fish produces a result somewhere between baking & steaming. The juices from the fish, herbs & vegetables blend and baste the fish. Because the individual servings are sealed in a packet, nothing is lost. You might want to serve fish packets with cooked rice, bread or pita to get every last drop.

Soup for the “New” You in the New Year

As we begin the new year, many people are interested in letting go of the old and starting anew. In nutrition, this would be most synonymous with cleansing. That said, the cold outdoors does not signal for us to do “spring cleaning”.

In fact, winter is traditionally a time to nourish ourselves from the cold. This may seem like a mixed message but soups provide a good balance of these two forces.

Soups made with good, wholesome ingredients are able to provide your body with the nutrition it needs and yet still maintain a light, unheavy demeanor so your body can focus on doing other tasks beyond digestion. This beautiful combination can help keep you warm through this winter but keep you on track with allowing the layers that don’t serve you to fall away.

There are a wide variety of soup recipes available on the internet. Some great soups to consider making include lentil soup, vegetable soup, stew and chicken soup. About.com has a recipe for Gingered Carrot Soup. Or try Soupsong.com’s post for Mediterranean Kitchen Lentil Soup.

It’s a Wrap!

2016 has come to a closed. Endings are a new beginning – enter 2017. A “must know about” in 2017 is how wonderful wraps are. Wraps are an easy way to ensure you eat the proper nutrition but don’t require much time in the kitchen. In fact, with a little advanced prep time, making a wrap can take just minutes!

Customizing a wrap recipe for you is both quick, easy and ensures you love your food. No two persons are alike. The below recipe will help provide a foundation for finding your own favorite wrap recipe.

Customized Healthy Wrap Recipe
Lean protein (chicken or fish) or smoked salmon
Greens (spinach, swiss chard,.. you choose!)
Chopped onions (red or white, cooked or uncooked)
3 to 4 types of chopped veggies (choose your favorite)
Your favorite low-fat dressing or sauce
Wraps (brown rice, corn or sprouted wheat)

How to make your wrap:
Heat your wrap lightly, add a line or two of your favorite dressing/sauce, heat your protein and add to the wrap, add your greens, add your chopped veggies and add onions. Roll the wrap up, making sure you fold in the bottoms so the inside does not fall out.

Just like that, you have a tasty source of protein, carbohydrates and vegetables! The best part: you can prepare all of the insides in advance so it only takes minute to make a wrap and get going.
